The Perfect Summer Breakfast: Fluffy Banana Pancakes.

With summer lurking (hello June!) the time for delicious, summertime, gut-friendly breakfast is here. And nothing screams summer like a stack of pancakes (banana pancakes that is).

High in protein and fibre, these banana pancakes will leave you satisfied and your gut happy! Follow the recipe below.

INGREDIENTS:

Oats
Chia seeds
Large eggs
Egg whites
Banana
Baking powder
Flavoring agents (cinnamon, salt and vanilla extract add extra flavour)
Protein powder (optional)

METHOD:

  1. Add all of the ingredients into a high-speed blender (or use a whisk and blend together that way!)
  2. Keep on mixing until all ingredients are combined and the batter is smooth.
  3. Pre-heat pan to a medium heat. Spray with cooking spray or add some coconut oil. Using a tablespoon, scoop the mixture onto the pan, forming a medium-sized circle.
  4. Keep on the heat for 4-5 minutes until bubbles start forming and then flip onto the other side.

Serve them warm with your favourite toppings and enjoy!
