The Kurami Way
Kurami is a gut health-focused, premium meal delivery service founded in London in 2020. We deliver fresh meal paths daily across London and frozen, heat-and-eat meals nationwide across the UK. Every meal is gluten-free and dairy-free as standard, nutritionist-approved, chef-crafted, and designed to bring you closer to 30g of fibre a day, built to fit into real life and make eating well feel effortless rather than effortful.
But Kurami is more than a delivery service. It is a philosophy , one that was there before gut health became a trend, and will still be there long after the next one arrives.
This page explains what that philosophy is, where it comes from, and why every decision we make, every ingredient, every macro, every dish, connects back to it.
What is Kurami?
Kurami was founded by Camilla Pigozzi Garofalo, whose background in anthropology, the study of how humans live, eat, and connect across cultures, shapes everything about how we approach food.
The name comes from Kura, the Māori word for treasure. It was chosen deliberately. We believe your health is your most valuable asset, and that food, when it is thoughtfully made, is one of the most powerful tools you have to protect it.
Kurami is not a diet. It is not a detox programme. It is not built around restriction or deprivation. It is built around the idea that eating well should feel like a pleasure, where the most nourishing food can also be the most delicious, and that you should not have to choose between the two. It is a way of eating that fits into your life, not something that asks you to reshape it.
We are one of London's original gut-health focused meal delivery services, operating since 2020, before gut health was a mainstream conversation. The science has caught up with what we always believed: that what happens in your gut is closely linked to how you feel, day to day.

Why gut health?
Your gut is not just a digestive organ. It plays a central role in many aspects of your health.
Your gut microbiome, the ecosystem of trillions of bacteria, fungi, and other microorganisms living primarily in your large intestine, influences immune function, energy levels, and digestion. It has also been linked to aspects of mood, skin health, and long-term disease risk, including cardiovascular disease and type 2 diabetes. A large proportion of immune activity takes place in the gut, and around 90% of the body's serotonin is produced there.
When your gut microbiome is diverse and well-nourished, this is often reflected in more consistent energy, improved digestion, and a general sense of wellbeing. When disrupted, through less varied diets, high reliance on ultra-processed foods, chronic stress, or a lack of dietary variety, imbalances can affect how the body feels and functions over time.
The good news: your microbiome is remarkably responsive. Consistent changes in what you eat can meaningfully shift its composition within weeks.
Every Kurami meal is designed with this in mind. Not as a clinical intervention, but as food that works with your body rather than against it, every single day.
Why gluten-free and dairy-free as standard?
This is the question we are asked most often, and it deserves a clear, honest answer.
Gluten and dairy are two of the most commonly reported dietary sensitivities. For people with coeliac disease, gluten causes direct intestinal damage. For the much larger group with non-coeliac gluten sensitivity, estimated at up to 6% of the population, many of them undiagnosed, symptoms including bloating, fatigue, brain fog, and digestive discomfort are commonly reported. For people with lactose intolerance (which affects a significant proportion of adults worldwide, including many who have never connected it to their symptoms), dairy can cause digestive symptoms in those who do not tolerate lactose well.
Kurami was founded on personal experience. Camilla is coeliac and lactose intolerant, and built Kurami to create a space where eating could feel straightforward again, without the constant need to check labels, question menus, or second-guess ingredients.
That starting point shaped the entire approach. By making every meal gluten-free and dairy-free as standard, not as a filter, not as a premium add-on, but as the baseline of the entire kitchen, we remove that layer of vigilance entirely. Every meal, every calorie tier, every dietary preference meets the same standard.
This is not about suggesting that gluten or dairy are inherently problematic. Many people tolerate them well and enjoy them as part of a balanced diet. But for those who do not, and for those who simply want a more predictable, consistent way of eating, Kurami offers a foundation that feels safe, reliable, and easy to live with.
The role of fibre: why 30g a day matters
The UK recommended daily intake of fibre is 30g. The average person in the UK eats approximately 18g. That 12g gap is not a minor shortfall; it is a relevant factor in microbiome health, blood sugar regulation, cardiovascular health, and digestive function.
Dietary fibre is the primary fuel source for your gut bacteria. Without adequate fibre, the beneficial bacteria that keep your gut environment balanced and that produce the short-chain fatty acids essential for gut lining integrity and overall gut function are essentially starved. Research suggests that a microbiome consistently low in fibre may affect the integrity of the gut lining over time.
Adequate fibre intake is associated with a range of well-evidenced health outcomes, including reduced risk of type 2 diabetes, heart disease, and colorectal cancer. It supports more stable blood sugar levels, helping to support more consistent energy throughout the day. It supports gut lining integrity and may positively influence inflammatory processes that affect various aspects of health.
Every Kurami meal path is designed to bring you consistently close to 30g of fibre a day, not as a one-off achievement, but as a reliable daily baseline built into the food, so you do not have to track it.
Our menus include over 100 different plant varieties every week. Fibre diversity matters as much as fibre quantity; different plant fibres feed different bacterial species, and the broader the range, the more resilient and diverse the microbiome becomes.

Balanced macros, energy that lasts
Gut health and energy are more connected than most people realise. The post-lunch slump and the mid-afternoon crash are often linked to fluctuations in blood sugar, typically driven by meals higher in fast-releasing carbohydrates and lower in overall balance.
Every Kurami meal is built around four elements that work together to support more stable energy: quality protein, healthy fats, fibre, and slow-releasing carbohydrates. Our nutritionist sets macronutrient parameters for every dish across all three calorie tiers, and our chefs work within those parameters to create food that genuinely satisfies, not meals you tolerate for their health credentials, but dishes you actually look forward to.
Importantly, this does not come at the expense of enjoyment. Thoughtfully made desserts and drinks, including our use of high-quality dark chocolate, are part of the Kurami experience. The goal is not to remove these elements, but to integrate them in a way that feels balanced and sustainable.
When food is made with enough care, there is no real divide between what supports your health and what you genuinely want to eat.
The anthropological approach to food
Food is not just fuel. It is culture, memory, connection, and experience. And one of the most consistent findings in gut health research is that dietary diversity, eating a wide variety of different foods from different culinary traditions, is one of the most powerful ways to support a healthy microbiome.
Kurami's menus are shaped by a background in anthropology, where food is understood not as a set of fixed cuisines but as a reflection of movement, exchange, and adaptation across cultures. A week of Kurami meals draws on traditions from across the world, spice-led cooking and fermentation practices, grain-based dishes and vegetable-forward preparations, each offering distinct ways to build variety and balance. This naturally introduces a broader range of fibres, polyphenols, and nutrients than any single dietary pattern can provide.
It is also quite simply more interesting. And food that you genuinely enjoy eating is food you will keep eating, which is the only way any of this actually works.
London was the right place to build Kurami. Nowhere else in the world has the culinary plurality, the depth of food culture, and the expectation of genuine quality across such a wide range of traditions. We are, in many ways, London food made portable.
Who is Kurami for?
Kurami is designed for people who want to feel better through what they eat, without overcomplicating it.
More specifically, it tends to resonate most with people who:
Are experiencing gut symptoms, bloating, low energy, irregular digestion, and brain fog that they have not been able to address through general healthy eating alone.
Have been told to avoid gluten or dairy, or suspect they are sensitive, and want a meal solution that removes that variable without requiring constant vigilance.
Busy and professional, with limited time or energy to cook nutritionally balanced meals every day, but still want meals that feel balanced and considered.
Want a diverse, globally inspired range of food that they genuinely enjoy, not a bland, repetitive "health food" rotation that requires willpower to sustain.
Are looking for a consistent way of eating that fits into their lives, not a quick fix, but something that supports how they want to feel over time.
