Almond Butter Stuffed Dates
Not your regular stuffed dates! 1 date contains as much fibre as an average piece of fruit, except it also has the power to satisfy your sweet tooth wholesomely. Enjoy as a high fibre snack or healthier dessert
Ingredients
- 12 Medjool dates, pitted
- 60g almond butter
- 20g shredded coconut
- 35g chopped nuts (we love hazelnuts)
- 1 tsp vanilla extract
- Pinch of sea salt
Method

Slice each date lengthwise to create an opening. Remove the pit from each date and set aside.

Combine almond butter, shredded coconut, chopped nuts, vanilla extract, and a pinch of sea salt in a bowl.

Mix well until you have an even, slightly chunky mixture.

Stuff each date with the nutty coconut mixture using a teaspoon or your fingers. Press the sides of the dates to close the opening.

Place the stuffed dates in the refrigerator for at least 30 minutes to allow them to firm up.

Once chilled, enjoy it as a snack or a healthier dessert.
Optional - Toasted Coconut Coating
Before chilling, roll the stuffed dates in some additional shredded coconut for an extra layer of flavour.
Optional Variations
- Drizzle with melted dark chocolate for a decadent touch
- Add a sprinkle of cinnamon or cardamom to the filling for a warm, aromatic flavour
- Dust with a touch of powdered matcha or cocoa for a unique twist
