Courgette & Carrot Slices
Ingredients (Makes 12 Slices):
* 300g courgette, grated and excess water drained
* 200g carrots, grated
* 240g or 1 large white onion, diced
* 5 eggs
* 4g baking powder
* 1 heaped tsp herbs de Provence (or your favorite herbs)
* 5 tbsp (60g) olive oil
* 150g almond flour
* 100g plant-based mozzarella cheese, grated
* 2g salt
* Black pepper to taste
Method:
1. Preheat oven to 170°C (fan) and line a loaf tin with parchment paper.
2. Whisk eggs, then mix in almond flour until smooth. Add courgette, carrot, onion, and mozzarella. Season with herbs, salt, and pepper, and stir in baking powder.
3. Pour mixture into tin and bake for 30-40 minutes, until golden and a skewer comes out clean.
4. Cool before slicing. Store in the fridge for up to 5 days or freeze for later. Each slice offers 6.5g of protein, making it a great balanced snack or meal addition.
